Malva Pudding

Ingredients

  • For the pudding:
  • 1 large egg
  • ½ cup sugar
  • 1 tablespoon apricot jam
  • 1 ½ tablespoon white vinegar
  • 1 cup milk
  • 1 teaspoon baking powder
  • 1 tablespoon baking soda
  • Pinch of salt
  • For the Sauce:
  • ½ cup butter
  • 1 cup heavy cream
  • ½ cup sugar
  • ½ teaspoon vanilla
  • ½ cup of fresh orange juice, sherry or brandy

Preparation

For the pudding:

Using an electric beater beat egg and sugar until light and fluffy. Beat in apricot jam. Combine vinegar and milk then add the powder, soda and salt. Alternately fold this mixture into the egg mixture.  Pour the batter into a medium greased ovenproof dish. Bake at 350 degrees for 45 minutes.

For the Sauce:

Slowly melt sauce ingredients together over low heat. When the pudding comes out of the oven, pour the warm sauce over the pudding. Pierce the pudding with a fork to aid the absorption of the sauce. Serve hot with cream, custard or ice cream.
